Mint Cream Cheese Brownies

An irresistible and decadent brownie treat.

Yield: Makes 12 brownies


  • 1 cup granulated sugar
  • 2/3 cup baking cocoa
  • 1/3 cup all-purpose flour
  • 1/2 tsp. baking powder
  • 4 egg whites, lightly beaten
  • 1/4 cup grapeseed oil
  • 1 tsp. vanilla extract
  • 1/2 tsp. peppermint extract
  • Cooking spray
  • 6oz. nonfat cream cheese
  • 3 Tbs. granulated sugar
  • 1 Tbs. all-purpose flour
  • 1 egg white
  • 1/2 tsp. vanilla extract
  • 1/4 tsp. peppermint extract


  1. Preheat oven to 350 degrees F
  2. Combine first 4 ingredients in a large mixing bowl; stir well
  3. Combine 4 egg whites and next 3 ingredients in a small bowl; add to dry ingredients, stirring well
  4. Spread batter in an 8-inch square pan coated with cooking spray
  5. Combine cream cheese and remaining ingredients in a medium bowl
  6. Beat at low speed of an electric mixer until smooth
  7. Spoon cream cheese mixture by tablespoonsful over cocoa mixture
  8. Cut through cream cheese and cocoa mixtures with a knife to create a marbled effect
  9. Bake for 22 minutes or until wooden pick inserted in center comes out almost clean
  10. Let cool in pan on a wire rack
  11. Cut into bars
