1 tablespoon chopped fresh cilantro
1 small red onion, chopped
1 medium green bell pepper, chopped
2 tablespoon red wine vinegar
Juice of 1 lemon or lime
1 teaspoon ground cumin
6 plum tomatoes, cored and cut in chunks
Place cilantro, onion and pepper in a food processor or blender. Blend until coarsely chopped. Add the rest of the ingredients and pulse until the mixture is chopped in small pieces.
Place in serving bowl and serve immediately or cover and refrigerate until ready to use, up to 3 days.
