This quick wrap version of a tuna sandwich is elegant enough to serve for dinner. You can substitute canned salmon with bones for even more calcium than the 150 mg provided in this recipe.
6-ounce can tuna packed in water, drained well
1 fresh tomato, cored and diced
1/2 cup green onion, sliced
1/2 cup diced cucumber
2 tablespoons nonfat mayonnaise
1/4 cup nonfat plain yogurt
2 nonfat flour tortillas
4 tablespoons nonfat grated mozzarella
Preheat oven to 350º.
Combine tuna with vegetables, mayonnaise and yogurt.
Divide mixture between 2 flour tortillas, placing mixture on the top edge of each tortilla.
Roll each tortilla up and place on cookie sheet with seam side down.
Sprinkle 2 tablespoons nonfat grated mozzarella over the top of each one and bake for 5 minutes or until cheese is melted.
Serve with fresh crisp vegetables on the side.
