Low Calorie Hollandaise Sauce
Great for eggs benedict or grilled chicken!
Yield: Makes 1 1/2 cup (1 1/2 TBS per serving)
Ingredients
- ⅓ c. instant non-fat dry milk
- 1 ¼ tsp. dry mustard
- 1 tsp. salt
- ⅛ tsp. freshly ground pepper
- 1Tbsp. all-purpose flour
- 1 medium egg
- 1 c. water
- 2 Tbsp. white vinegar
- 1 Tbsp. margarine
- Sugar substitute equal to 6 tsp. sugar
- Chopped fresh tarragon, chives or basil optional
Instructions
- Combine dry ingredients in top of double boiler
- Beat egg slightly and combine with water and vinegar
- Add to dry ingredients slowly, stirring to blend well
- Cook over simmering water, stirring constantly until thick and smooth
- Remove from heat; add margarine, sweetener and herbs if using, blend well
- May also refrigerate and enjoy cold as a seafood or egg salad dressing

I love hollandaise sauce and this recipe looks like it actually is healthy alternative
