Low Calorie Hollandaise Sauce
Great for eggs benedict or grilled chicken!
Yield: Makes 1 1/2 cup (1 1/2 TBS per serving)
Ingredients
- 1/3 c. instant non-fat dry milk
- 1 1/4 tsp. dry mustard
- 1 tsp. salt
- 1/8 tsp. freshly ground pepper
- 1 TBS all-purpose flour
- 1 med. egg
- 1 c. water
- 2 TBS white vinegar
- 1 TBS margarine
- Sugar substitute equal to 6 tsp. sugar
Instructions
- Combine dry ingredients in top of double boiler
- Beat egg slightly and combine with water and vinegar
- Add to dry ingredients slowly, stirring to blend well
- Cook over simmering water, stirring constantly until thick and smooth
- Remove from heat; add margarine and sweetener, blend well
- May also refridgerate and enjoy cold as a seafood or egg salad dressing
- For a professional touch, add finely chopped fresh herbs such as tarragon or basil
