Low Calorie Hollandaise Sauce

Great for eggs benedict or grilled chicken!

Nutrition Note: Up to 1 1/2 tablespoons may be considered free in diabetic exchange. 1 1/2 tablespoons = 21 calories.

Yield: Makes 1 1/2 cup (1 1/2 TBS per serving)

Ingredients

  • 1/3 c. instant non-fat dry milk
  • 1 1/4 tsp. dry mustard
  • 1 tsp. salt
  • 1/8 tsp. freshly ground pepper
  • 1 TBS all-purpose flour
  • 1 med. egg
  • 1 c. water
  • 2 TBS white vinegar
  • 1 TBS margarine
  • Sugar substitute equal to 6 tsp. sugar

Instructions

  1. Combine dry ingredients in top of double boiler
  2. Beat egg slightly and combine with water and vinegar
  3. Add to dry ingredients slowly, stirring to blend well
  4. Cook over simmering water, stirring constantly until thick and smooth
  5. Remove from heat; add margarine and sweetener, blend well
  6. May also refridgerate and enjoy cold as a seafood or egg salad dressing
  7. For a professional touch, add finely chopped fresh herbs such as tarragon or basil
