Lemon Roasted Chicken

Roasted chicken with a lemon zest flavor.

Yield: Serves 4


  • 1 whole chicken
  • salt and pepper
  • 1 tsp. oregano
  • 1 clove garlic, minced
  • 2 Tbs. olive oil
  • 1 cup chicken broth
  • 2 Tbs. lemon juice


  1. Remove the giblets and neck, wash the chicken and pat it dry
  2. Salt and pepper the chicken to taste
  3. Place in roasting pan
  4. Sprinkle half the Oregano and Garlic inside the cavity, and half outside
  5. Add olive oil and chicken broth
  6. Cover and roast at 350º F for 1 - 1 1/2 hours
  7. During the 30 minutes of cooking add the lemon juice
