Lemon Fish
Yield: Serves 4
Ingredients
- 4 white fish fillet
- 1 Tbs. olive oil
- 1 Tbs. fresh lemon juice
- 1 garlic clove, thinly sliced
- 4 Tbs. whole milk ricotta cheese
- 4 Tbs. low fat plain yogurt
- 1 Tbs. fresh chives, optional
Instructions
- Preheat oven to 400º F
- Place fish in aluminum foil packet with oil, garlic and lemon juice
- Place fish packet in oven
- Mix the ricotta cheese with yogurt and stir in snipped chives
- When fish is done, remove and serve with ricotta/yogurt sauce
