Key Lime Pie
No one ever thought a tasty favorite could be healthy like this.
Yield: Serves 4
Ingredients
- 1 packet unflavored gelatin
- 3 Tbs. lime juice
- 1/2 cup boiling water
- 1/2 cup Splenda
- 1 cup light cream
- 1 tsp. vanilla
- 2 drops green food coloring
- 1 cooked pie crust
Instructions
- Sprinkle gelatin over lime juice and let it stand for 1 minute
- Add boiling water and sweetener to gelatin mixture and stir until gelatin is dissolved
- Refrigerate about 45 minutes or until slightly thickened
- Combine cream and vanilla and freeze 30 minutes
- Remove from freezer and whip at high speed until stiff
- Spoon pie filling into cooked pie crust
- Chill until firm
