Italian Dressing

A tantalizing combination of aromatic herbs, olive oil and lemon zest.

Yield: Serves 4


  • 1/4 cup low-sodium chicken broth
  • 1 Tbs. minced red bell pepper
  • 1 Tbs. chopped basil
  • 1 Tbs. white wine vinegar
  • 2 tsp. extra virgin olive oil
  • 1/2 tsp. grated lemon zest
  • 1/2 tsp. salt
  • 1/2 garlic clove, minced
  • 1/4 tsp. dried oregano leaves, crumbled
  • 1/8 tsp. freshly ground pepper


  1. In a jar with a tight-fitting lid, combine all the ingredients
  2. Cover and shake well
  3. Refrigerate, covered, overnight
  4. Shake again before serving
