Irish Stovetop Skillet

Yield: Serves 6


  • 1/3 cup water
  • 3 cups thinly sliced raw potatoes
  • 1 1/2 cups chopped onions
  • 3 cups sliced cabbage
  • 1 1/2 cups shredded carrots
  • 2 tsp. dried parsley flakes
  • 1/8 tsp. black pepper
  • 8 oz. lean corned beef, shredded


  1. Put water in bottom of 10-inch skillet
  2. Arrange sliced potatoes in water
  3. Layer onion, cabbage, carrots, parsley and pepper over potatoes
  4. Top with corned beef
  5. Cover and simmer over med heat for 20 minutes
  6. Mix well before serving
