Homemade Mayonnaise

Make your own, without the sugars and stabilizers!

One teaspoon contains 3 grams fat and 30 calories. Exchange value 2 teaspoons, 1 fat exchange.
Yield: Makes 1 cup (2 TBS per serving)


  • 1/2 tsp. dry mustard
  • Juice of 1 lemon
  • 3/4 c. unsaturated oil
  • 1 tsp. salt
  • 1 egg


  1. Put first 4 ingredients into a bowl and beat until smooth
  2. Add oil 1 tablespoon at a time for about 5 additions
  3. Beat well after each addition
  4. Pour remaining oil in a thin stream, beating constantly
  5. Note: Can also be made in a blender for ease of incorporating oil
