Homemade Granola

So good you won't believe it's sugar free!

Diabetic exchange/serving: 1 starch, 1 fat. 140 cal; 15 g carbohydrates, 5 g protein, 7 g fat, 57 mg sodium.

Yield: Makes 6 ½ cups (½ cup per serving)

Ingredients

  • 4 c. quick cooking rolled oats
  • ½ c. Grape Nuts cereal
  • Granulated sugar sub. equal to 1/4 c. sugar
  • 1 c. chopped peanuts
  • ⅓ c. honey
  • ½ c. wheat germ
  • ½ c. raisins

Instructions

  1. Preheat oven to 350 F. Have 2 rimmed baking sheets ready
  2. Spread oats on one of the ungreased baking sheets; bake 10 minutes
  3. Combine remaining ingredients except wheat germ and raisins
  4. Spread mixture on the other baking sheet. Bake 20 minutes, stirring once to brown evenly
  5. Cool in Oven
  6. In a large bowl, stir oats, wheat germ and raisins into mixture
  7. Refrigerate in jars or plastic containers
