Hearty Zucchini Soup

Loaded with fresh vegetable goodness! Suitable for Diabetics too!

Yield: Serves 6-8


  • 2-4 tbsp. butter or margarine
  • 2 sm. white onions, thinly sliced
  • 2 lg. celery rib, scraped & thinly sliced
  • 2 lg. carrot, scraped & thinly sliced
  • 3 c. chicken broth or vegetable broth
  • 3 med. zucchini, unpeeled & cut into quarters lengthwise & thinly
  • sliced
  • Salt & pepper (to taste)


  1. In heavy soup pot melt butter or margarine and saute onions, celery and carrot with about 1 TBS of salt until soft
  2. Stir in 1/2 cup broth and zucchini
  3. Cook until zucchini is tender, 10 to 12 minutes
  4. Add remaining broth and simmer slowly until vegetables are tender, but still hold their shapes
  5. Season to taste
  6. Serve hot, sprinkled with cheese if desired
  7. For a professional touch, add chopped fresh garlic in the beginning, and chopped basil at the finish.
