Hawaiian Chicken

Send your old boring chicken on vacation. This hawaiian-inspired recipe will liven your next chicken dinner.

Yield: Serves 4

Ingredients

  • 3 Tbs. hot honey soy sauce
  • 1 Tbs. ginger garlic liquid spice
  • 4 skinless, boneless chicken breast halves
  • 1- 8oz. can pineapple chunks
  • 1 1/2 tsp. cornstarch
  • 1/4 cup sliced green onion
  • 1/2 medium red pepper, cut into small strips
  • Cashews or peanuts, for garnish

Instructions

  1. Drain pineapple juice and reserve
  2. In shallow glass dish, combine hot honey soy sauce and ginger garlic liquid spice
  3. Add chicken breasts, turning to coat all sides
  4. Let marinate at least 15 minutes
  5. Remove chicken from marinade (reserve marinade) and place on grill or under broiler
  6. Cook 3 to 5 minutes per side until done
  7. Remove from heat and keep warm
  8. In small saucepan, combine reserved marinade, pineapple juice, and cornstarch
  9. Bring to a boil over medium heat, stirring constantly
  10. Stir in pineapple, onion, and red pepper
  11. Cook 1 minute more or until heated through
  12. To serve, place chicken on serving platter and top with sauce
  13. Garnish with nuts
