Grilled Sesame Salmon
A salmon dish fit for a special occasion
Yield: Serves 4
Ingredients
- 2- 6 oz. salmon fillets, all skin removed
- salt and pepper
- 4 Tbs. sesame seeds
- 3 tsp. olive oil
- 2 Tbs. rice wine vinegar
- 2 Tbs. soy sauce
- 2 cucumbers, sliced thinly lengthwise
Instructions
- Heat grill or broiler
- Slice the salmon fillets open horizontally, leaving one end intact
- Spread fillets open and turn over
- Season with salt and pepper
- Tightly roll fillets
- Secure with toothpick
- Pour sesame seeds into a small dish
- Place rolled fillets in the seeds and coat bottom
- Drizzle with olive oil
- In a small bowl, mix vinegar and soy sauce
- Set aside
- Fold edges of a piece of heavy-duty aluminum foil to form a shallow baking pan; place on grill
- Arrange rolled fillets on foil
- Grill 4-6 minutes on each side (or broil in the oven)
- Remove, drizzle with reserved soy mixture and place on bed of cucumber strips
