Greek Yogurt with Honey-Roasted Figs

Luscious Greek yogurt is topped with lightly-roasted figs, a little spice and a drizzle of honey. Serve as a dessert or a lovely breakfast.

Yield: Serves 4

Ingredients

  • 6 ripe fresh figs
  • 3 Tbsp plus 1 tsp honey
  • Pinch ground cinnamon
  • Pinch ground nutmeg
  • 2 cups plain fat-free Greek yogurt
  • 4 tsp chopped toasted almonds or walnuts

Instructions

  1. Preheat oven to 375 F. Coat a glass pie plate or other small baking dish with nonstick spray.

  2. Place figs, cut side up in baking dish. Drizzle with 2 Tbsp of the honey and sprinkle with the cinnamon and nutmeg.

  3. Roast until figs are soft, about 10 minutes, shaking the baking dish halfway through cooking to gently toss figs.

  4. Spoon ½ cup yogurt into each of 4 serving bowls. Top with figs. Drizzle each with 1 tsp honey and 1 tsp nuts. Sprinkle with additional cinnamon and nutmeg if desired.
