Gingerbread

Makes a great snack anytime! Versatile too!

Yield: Makes 12 servings

Ingredients

  • 1 c. unsifted flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 tsp. ginger
  • 3 TBS butter
  • 1 egg
  • 1/2 c. molasses
  • 6 TBS boiling water

Instructions

  1. Combine flour, soda, salt, cinnamon, and ginger, mixing well; set aside
  2. Cream butter until fluffy, add egg and molasses, blending well
  3. Add dry ingredients, alternately with water
  4. Turn into greased 8 inch baking pan
  5. Bake in 325 degree oven for about 25 minutes or until done
