Frittata
A perfect low-carb mixture in this frittata.
Yield: Serves 2
Ingredients
- 1/4 cup cauliflower
- 1/4 cup shredded zucchini
- 3 whole eggs
- 4 ounces deli ham, sliced and chopped
- 1 cup shredded cheese
- salt and pepper
Instructions
- Preheat oven to 375 º F
- Heat oil in pan
- Add cauliflower and zucchini to skillet and cook 5-6 minutes, stirring occasionally
- Beat the eggs
- Remove vegetables from skillet and add to eggs
- Pour in glass dish (sprayed with oil), add ham and cheese and bake for 30-35 minutes or until cooked thoroughly
