Feta Stuffed Chicken Burger
A chicken burger original with Mediterranean influence.
Yield: Serves 4
Ingredients
- 16 oz. ground chicken
- 1 Tbs. fresh thyme, stalk removed
- 1 clove garlic, crushed
- 3.5 oz. feta cheese, reduced-fat, crumbled
- 4 medium pita bread or 4 whole-grain buns*
- 4 small leaf lettuce, romaine
- 2/3 C roasted red peppers (no oil)
- 5 black olives, in brine, sliced

Instructions
- Preheat the grill to medium
- Mix together chicken, thyme, garlic and feta in a bowl
- Divide mixture into four balls and then press them gently into patties
- Grill the burgers for 5-7 minutes on each side until golden and cooked through in the middle
- Warm the pita or buns under the grill and serve each with a burger, lettuce, peppers and olives
NOTE: You can use any herb to flavor these burgers; try fresh oregano, parsley or sage. Dried herbs can be used instead, but remember the flavor is stronger, so use only 1-2 tsp.

This recipe is delicious. I used dried herbs b/c no fresh on hand and adjusted the measurements accordingly. I will definitely make this again. The feta cheese gives this a salty tang so I did not use salt at all. Two forks up !

Yum Yum and Yum again!!!! This is one of the best recipes I've ever found for a chickenburger. fantastic!
