Eggs Benedict

A low-carb version of this dish down to the hollandaise sauce.

Nutrition Facts: Carbohydrates 0.3g

Yield: Serves 4

Ingredients

Hollandaise Sauce

  • 1/2 cup butter

  • 3 egg yolks, beaten

  • 1 Tbs. water

  • 1 Tbs. lemon juice

  • 4 eggs

  • Canadian Bacon

Instructions

  1. Lightly grease skillet
  2. Add water to fill skillet half-way
  3. Bring water to boiling
  4. Reduce heat and simmer
  5. Break eggs into cup and carefully slide one at a time into water
  6. Allow each egg space
  7. Simmer for 5 minutes
  8. Meanwhile, heat Canadian bacon in skillet
  9. Remove poached egg and serve with Hollandaise Sauce
  10. For sauce, combine all ingredients and heat in double boiler, stirring constantly
