Diabetic Fruit Bars
Moist and sweet, without the sugar!
Yield: Makes 10 bars
Ingredients
- 1/2 c. raisins
- 1/2 c. chopped prunes
- 1 c. water
- 2 eggs, beaten
- 1 tsp. soda
- 1 tsp. vanilla
- 1/4 tsp. salt
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/2 c. chopped nuts
Instructions

Boil fruit together for 5 minutes
Add 1/2 cup butter or margarine, set aside to cool
Combine remaining dry ingredients
Incorporate eggs and vanilla until smooth
Add batter to fruit mixture
Bake in an 11"x7" greased pan at 350 degrees for 25 to 30 minutes
Cool and cut into 1 inch bars

I tried this for a dessert since my mom was dx with DMII, it was a hit with everyone, should have made more! Luv It!
