
Atkins Friendly Recipe
Delicious Seafood Casserole
A low-carb trip to the sea.
Yield: Serves 6
Ingredients
- 1/2 lb. lobster meat
- 1/2 lb. crab meat
- 1/2 lb. sea scallops
- 1/2 lb. jumbo shrimp
- 1/4 cup butter
- 1/4 cup heavy cream
- 1 Tbs. Old Bay Seafood seasoning
- Salt and Pepper
- 1/4 cup dry sherry
- 1/4 cup mayonnaise
- 1/4 cup flax meal
- 1/4 cup parmesan cheese, shredded
- 1 lemon, juiced
Instructions
- Chop up the lobster meat and scallops to about 1/4" size
- Remove crab from its shell, chop to 1/4" size
- Devein the shrimp
- Saute the scallops in butter with salt and pepper until translucent in color
- Add the scallops and remaining seafood in a large bowl
- Add mayonnaise, seafood seasoning and lemon juice
- Combine until well coated
- Add the flaxmeal, heavy cream and sherry
- Combine and pour into a large casserole dish
- Sprinkle the top with parmesan cheese
- Bake at 400 degrees F for about 35 minutes, or until golden brown

Yum! this sounds so good not cheap to prepare though.
