Date Nut Cake

So moist and flavorful, you would never guess that it's suitable for diabetics!


Yield: Makes 9 slices

Ingredients

  • 1 stick margarine
  • 1 egg
  • 1 tsp. vanilla
  • 1 TBS liquid sweetener
  • 1 1/2 c. unsweetened applesauce
  • 1 c. chopped dates
  • 1 c. pecans
  • 2 c. flour
  • 1/2 tsp. cinnamon
  • 1/4 tsp. cloves
  • 2 tsp. soda

Instructions

  1. Mix together margarine, egg, vanilla, sweetener and applesauce
  2. Stir in dates and pecans
  3. Sift together dry ingredients and add to mixture, mixing well
  4. Bake in loaf pan at 350 degrees for 1 hour
  5. For a healthy snack, spread with fat free cream cheese
