Crushed Red Potatoes with Greens
|Vitamin A:||750iu (15%)|
|Vitamin C:||27mg (45%)|
3 medium red potatoes, cubed (leave skin on)
2 cups chopped kale
1/4 cup chicken broth
black pepper to taste
Place potatoes into 3 quart sauce pan, cover with water, bring to a boil, reduce heat to low boil and cook until almost tender. Drain, add remaining ingredients and cook for 2-3 minutes until kale is tender and potatoes absorb broth.
