Crock Pot Spicy Mexican Pork Stew

A hearty pork stew perfectly spiced in your Crock Pot.

Yield: Serves 4-6

Ingredients

  • 2 ears frozen corn, thawed and cut in 1 1/2-inch pieces
  • 1 1/2 pounds lean boneless pork (loin/sirloin roast), well-trimmed and cut in 1 1/2-inch pieces
  • 1- 14 oz. can kidney beans, drained and rinsed
  • 1- 15 oz. can pinto beans, drained and rinsed
  • 1- 14 oz. can stewed tomatoes
  • 1- 8 oz. can tomato sauce
  • 1 envelope taco seasoning
  • 2 Tbs. minced onion
  • 2 tsp. parsley flakes or cilantro leaves

Instructions

  1. In a 3 1/2- or 4-quart Crock Pot, place corn, pork pieces and beans (in order listed)
  2. In medium bowl, stir together stewed tomatoes, tomato sauce, taco seasoning and minced onion
  3. Pour into Crock Pot and stir lightly
  4. Cover and cook on low for 8 hours or until pork is tender
  5. Gently stir in parsley flakes or cilantro leaves

This is one great stew. It's spice and full of flavor. I like to add a little extra spice to it with hot salsa. My whole family loves it too.
