Crispy Parmesan Orange Roughy

A parmesan crust that's ever so delightful


Yield: Serves 4

Ingredients

  • 2/3 cup whole wheat bread crumbs
  • 1/4 cup Parmesan cheese
  • 1/2 tsp. paprika
  • 4- 6 oz. orange roughy fillets
  • 1/4 cup skim milk
  • Cooking spray

Instructions

  1. Preheat oven to 450 degrees F
  2. Coat a baking sheet with nonstick spray
  3. Mix first four ingredients together in a shallow dish
  4. Dip fillets into milk, then coat them with crumb mixture
  5. Place fillets on the prepared baking sheet, and bake for 8-10 minutes, or until coating is browned and fish flakes easily with a fork

This recipe works great by substituting crushed almonds for the parmesan cheese...delicious
