Cranberry Bread

You'll feel right at home with a slice.

Nutritional information per slice: 166 calories, 3.2 g fat, 1.8 g fiber
Yield: Makes 12 slices


  • Nonstick cooking spray
  • 1 cup all-purpose flour
  • 1/2 cup whole-wheat flour
  • 1 cup granulated sugar
  • 1 1/2 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 3 egg whites
  • 1/3 cup applesauce
  • 3 Tbs. buttermilk
  • 1 1/2 cups fresh cranberries
  • 1/2 cup chopped walnuts


  1. Preheat oven to 350 degrees F
  2. Lightly coat a loaf pan with nonstick cooking spray
  3. In a medium-size bowl, combine flours, sugar, cinnamon, salt and baking soda
  4. In a larger bowl, beat the egg whites at high speed for 1 minute
  5. Beat in applesauce and buttermilk
  6. Gradually add the flour mixture and beat until combined
  7. Stir in cranberries and walnuts
  8. Transfer to prepared loaf pan
  9. Bake for 45 minutes or until the edges begin to pull away from the sides of the pan and a wooden pick inserted in the center comes out clean
  10. Slice and serve
