Cranberry Bread
You'll feel right at home with a slice.
Yield: Makes 12 slices
Ingredients
- Nonstick cooking spray
- 1 cup all-purpose flour
- 1/2 cup whole-wheat flour
- 1 cup granulated sugar
- 1 1/2 tsp. ground cinnamon
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 3 egg whites
- 1/3 cup applesauce
- 3 Tbs. buttermilk
- 1 1/2 cups fresh cranberries
- 1/2 cup chopped walnuts
Instructions
- Preheat oven to 350 degrees F
- Lightly coat a loaf pan with nonstick cooking spray
- In a medium-size bowl, combine flours, sugar, cinnamon, salt and baking soda
- In a larger bowl, beat the egg whites at high speed for 1 minute
- Beat in applesauce and buttermilk
- Gradually add the flour mixture and beat until combined
- Stir in cranberries and walnuts
- Transfer to prepared loaf pan
- Bake for 45 minutes or until the edges begin to pull away from the sides of the pan and a wooden pick inserted in the center comes out clean
- Slice and serve
