Country Style Chili

Why buy chili when you can make it easily from scratch!

Yield: Serves 6 (1 cup serving)

Ingredients

  1. 1 lb. ground beef
  2. 3/4 c. chopped onion
  3. 1 (16 oz.) can kidney beans
  4. 1 pt. canned tomatoes (2 c.)
  5. 1 (8 oz.) can tomato sauce
  6. 1 (4 oz.) can corn with pimento (Mexican style)
  7. 1 1/2 c. frozen mixed vegetables
  8. 1 tsp. chili powder
  9. 1 tsp. salt
  10. 1/4 tsp. paprika
  11. 1 1/4 c. cayenne pepper

Instructions

  1. Brown ground beef with fat; drain
  2. Add kidney beans, canned tomatoes, tomato sauce, salt, chili powder, paprika, and cayenne pepper
  3. Simmer 1/2 hour
  4. While simmering, cook frozen mixed vegetables according to directions
  5. Add corn and mixed vegetables to chili and simmer for an additional 1/2 hour
