Coconut Delight

A creamy coconut treat.

Yield: Serves 12


  • 9 whole graham crackers, crumbed
  • 3 Tbs. coconut flakes
  • 2 packages fat-free instant vanilla pudding
  • 3 cups skim milk
  • 1 tsp. coconut extract
  • 1 cup fat-free whipped topping


  1. Mix graham cracker crumbs and coconut
  2. Pour 3/4 of mixture into sprayed 9 x 13-inch pan
  3. In a bowl, combine pudding mix, milk and coconut extract; whip to thicken
  4. Fold in thawed Cool Whip
  5. Spoon over crumb crust
  6. Sprinkle with remaining crumbs
  7. Cover and refrigerate

Another GREAT one! Even if you "blow it" and eat more than one piece, it is low enough and rich enough to redeem you by filling you up!
