Coconut Cream Pie

  • 4 eggs
  • 1/4 cup butter
  • 1 cup Splenda
  • 1/4 tsp. salt
  • 1/2 tsp. baking powder
  • 2 cups heavy whipping cream
  • 1 cup unsweetened coconut
  • 1 tsp. vanilla extract


  1. Preheat oven to 350F
  2. Place all ingredients in blender at one time and blend until mixed together
  3. Pour into a buttered 10-inch pie dish
  4. Bake in a 350F oven for 1 hour
