Cinnamon Pecan Muffins
Delicious nutty muffins.
Yield: Serves 6
Ingredients
- 1/3 cup pecans, chopped finely
- 1/2 tsp. cinnamon
- 1/2 cup natural sweetener
- 3 large eggs separated and at room temperature
- 3/4 cup protein powder
- 3/4 tsp. baking powder
- 1/4 tsp. salt
- 1/4 tsp. cream of tartar
- 3 Tbs. Greek yogurt
- 1 Tbs. butter
- 1/2 tsp. vanilla
- 2 tsp. almond extract
Instructions
- Combine pecans, cinnamon, and 1/4 cup sweetener and mix well
- Set aside for toppings
- Preheat oven to 325F
- Beat egg whites with cream of tartar until stiff but not dry
- Separately, beat egg yolks
- Add Greek yogurt, extracts, and remaining sweetener and beat thoroughly
- Combine protein powder, baking powder, and salt and mix into the yolk mixture
- Stir until combined, and then gently fold in the egg whites
- Fill greased muffin tins halfway
- Top with nut mixture and bake in preheated oven for 50-60 minutes
