Chocolate Mint Pie
A minty cool end to a delicious dinner.
Yield: Serves 10
Ingredients
- 9-inch graham cracker crust
- 10 oz. fudge mint cookies, crushed
- 6 Tbs. hot water
- 6 oz. reduced-fat cream cheese
- 1/2 cup granulated sugar
- 1 Tbs. milk
- 1/2 tsp. peppermint extract
- 8 oz. non-dairy whipped topping
- 1/2 tsp. vanilla extract
- 6 to 10 drops green food coloring
- Fresh mint leaves, if desired
Instructions
- Mix crushed cookies and hot water
- Spoon into graham cracker crust and gently spread to cover bottom
- Beat cream cheese until smooth
- Gradually beat in sugar, milk and peppermint extract
- Mix vanilla extract into whipped topping and fold into cream cheese mixture until smooth
- Stir in food coloring and spoon into crust, spreading evenly
- Refrigerate overnight
- Garnish with fresh mint leaves, if desired, before serving
