Chocolate Chip Cookies

A heavenly treat for diabetics.

Yield: 30 cookies

Ingredients

  • 1/4 c. margarine
  • 1 tbsp. granulated fructose
  • 1 egg
  • 1 tsp. vanilla extract
  • 3/4 c. flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 c. mini semi-sweet chocolate chips

Instructions

  1. Cream together margarine and fructose
  2. beat in egg, water and vanilla
  3. Combine flour, baking soda and salt in sifter
  4. Sift dry ingredients into creamed mixture, stirring to blend thoroughly
  5. Stir in chocolate chips
  6. Drop by a rounded teaspoon onto lightly greased cookie sheet about 2 inches apart
  7. Bake at 375 degrees for 8 to 10 minutes
