Chocolate Chip Cheesecake Stuffed Strawberries
This is the whole package, with chocolate chips and cream cheese stuffed into juicy, ripe strawberries topped with dark chocolate and graham crackers.Yield: 18 servings - 2 strawberries each
- 12 graham cracker squares
- 6 oz. dark chocolate (at least 60%)
- 1 brick neufchatel cream cheese
- 1/4 cup mini chocolate chips
- 2 Tbsp. honey
- 1 Tbsp. vanilla
- 36 strawberries
Run the graham crackers through the food processor until finely ground.
Melt the dark chocolate - we used a double boiler.
Mix the cream cheese, chocolate chips, honey, and vanilla with a hand mixer until well combined.
Use a huller to scoop out the centers of the strawberries. Then, use a small spoon to scoop the cream cheese filling in to the centers.
Next, dip the strawberries in melted chocolate, just enough to cover the tops, and immediately dip in the graham cracker crumbs.
Refrigerate to harden the chocolate and serve chilled.
