Chicken Parmesan
An Italian favorite without the carbs.
Yield: Serves 4
Ingredients
- 4 Chicken breasts
- 2 eggs, beaten
- 1 cup pork rinds, crushed
- 1/2 cup mushrooms
- 1/2 cup spaghetti sauce
- 1/4 olive oil
Instructions
- Dip the chicken in the eggs and then coat with the pork rinds
- Heat olive oil in pan and fry the chicken
- Saute the mushrooms
- Serve with spaghetti sauce and cheese
