Chicken Osso Buco Style
Chicken so special, you'll swear it was prepared by a restaurant.
Yield: Serves 4
Ingredients
- 4 chicken breasts, skin and fat removed
- 1 tsp. salt
- 1/4 cup chopped onion
- 1 large carrot
- 1/2 cup celery
- 1- 8 oz. Italian-style stewed tomatoes
- 1 Tbs. chopped fresh parsley
Instructions
- Spray skillet with cooking spray
- Over medium-high heat, add chicken and salt
- Cook until golden brown on both sides
- Transfer to bowl
- Meanwhile, cut onion and dice carrots and celery
- Add to skillet and cook on medium 10 minutes until lightly browned
- Return chicken to skillet; add tomatoes
- Heat to boiling over high heat
- Reduce heat to low
- Cover and simmer 25 minutes or until juices run clear when chicken is pierced
