1 cup frozen pitted cherries
3 baking apples, peeled, cored and sliced
2 tablespoon sugar
1/2 teaspoon cinnamon
2 cups fat-free pancake batter
Preheat oven to 350º. Lightly spray a large, nonstick skillet with vegetable oil cooking spray and heat over medium high heat.
Place cherries, apples, sugar and cinnamon in pan and saute until apples are tender - about 4-6 minutes.
Shake fruit so it is level in pan. Pour pancake batter over the top of the fruit and place the pan in the oven.
Bake until top is golden brown, about 12 minutes. Scoop out each portion and serve with the crust on the top.
