Serve these with veggie burgers, grilled chicken or fish.
2 large Idaho potatoes
1 tsp garlic powder
black pepper to taste
1/4 cup Parmesan cheese
Directions:
Preheat oven to 400 ºF. Wash potatoes and cut into 1/4-inch thick wedges. Mix the rest of the ingredients in a small bowl and set aside. Spray a large cookie sheet with vegetable oil spray. Arrange the potato wedges in rows so they don’t touch. Spray the top side of the potatoes with the vegetable oil spray and place them in the oven. Bake potatoes until golden brown, about 10 minutes. Flip them over and continue baking until brown on both sides, about 10 more minutes. Place potatoes in serving bowl and toss with seasoning/cheese mixture.
