Brown and Wild Rice Meatloaf

This is not your mom's meatloaf- it's so much better.

Yield: Serves 6

Ingredients

  • 1 1/4 cups brown and wild rice
  • 1 1/2 Tbs. beef soup base
  • 1 pound lean ground beef
  • 2 eggs
  • 1/4 cup finely chopped green pepper
  • 2 1/2 Tbs. horseradish mustard
  • 2 Tbs. ketchup, plus 1/4 cup ketchup
  • 1 1/2 Tbs. onion soup base
  • 1 tsp. tomato horseradish snack & dip mix

Instructions

  1. Preheat oven to 350 degrees F
  2. Cook rice per package directions
  3. Add the beef soup base to cooking water
  4. In medium bowl, combine 1 cup of the cooked rice (serve the remaining rice with the meatloaf), ground beef, eggs, green pepper, horseradish mustard, 2 Tbs. ketchup and onion soup base
  5. Mix well
  6. Shape into a loaf and place in baking dish
  7. Bake for 50 to 60 minutes or until loaf is firm
  8. Combine remaining ketchup and dip mix
  9. Spoon over loaf the last 10 minutes of baking time
  10. Slice and serve
