Biggest Loser Mint Chocolate Chip Frozen Yogurt Photo
Yield: Serves 4

Ingredients

  • 1 3/4 cup skim milk
  • 2 tsp. powdered gelatin
  • 1 cup Splenda
  • 1 17.6-oz. container 0-percent Fage Brand Greek yogurt
  • 1/2 tsp. organic peppermint extract
  • Green food coloring
  • 1 oz. 99-percent chocolate, unsweetened, very finely chopped or 1/4 cup cocoa nibs

Instructions

  1. In a large mixing bowl sprinkle gelatin over 1/2 cup skim milk
  2. Heat together remaining 1 1/4 cup skim milk with Splenda
  3. When boiling, pour into the bowl and stir until gelatin is dissolved
  4. Then, stir yogurt into gelatin mixture
  5. Whisk in peppermint extract and enough green food coloring for desired color
  6. Finally, freeze in an ice cream machine according to instructions
  7. Stir in chocolate and serve or freeze until desired consistency

I would try Stevia instead of Splenda - Stevia seems to work pretty good with milk-based recipes.

Just tried this recipe splurged for the greek yogurt and everything. I was excited because its an estimated 3 WW points with the choc chips. This was horrible I can eat a lot of diet food, but this was definitely not a substitute for real green mint . Now it stinks cause I dont wanna waste and I have to find some way to eat it :(

Looks and sounds good, but I can't believe a reputable chef would choose to recommend Splenda with all its bad info!! Rocco - maybe you need to read Jillian's new book on the dangers of it!
