Barbecue Roasted Salmon

Elegant salmon with an all-American flair.

Yield: Serves 4


  • 1/4 cup pineapple juice
  • 2 tablespoons fresh lemon juice
  • 4- 6 oz. salmon fillets
  • 2 Tbs. brown sugar
  • 4 tsp. chili powder
  • 3/4 tsp. cumin
  • 1/2 tsp. salt
  • 1/4 tsp. cinnamon
  • Cooking spray
  • Lemon wedges (optional)


  1. Combine first 3 ingredients in a zip-type plastic bag, seal and marinate in refrigerator 1 hour, turning occasionally
  2. Preheat oven to 400 degrees F
  3. Remove fish from bag; discard marinade
  4. Combine sugar and next 5 ingredients in a bowl
  5. Rub over fish
  6. Place in an 11 x 7-inch baking dish coated with cooking spray
  7. Bake for 12 minutes or until fish flakes easily when tested with a fork
  8. Serve with lemon, if desired
