Banana and Oat Muffins
This hearty breakfast recipe is a favorite at the Biggest Loser Resort.
Yield: Serves 6
Ingredients
- 1 large egg
- ¾ cup apple juice
- 1 cup raisins
- 1 cup chopped banana
- ½ cup applesauce
- 1 cup whole wheat flour
- 1 cup quick oats
- 1/3 cup fructose
- 1 tablespoon baking powder
- 1 teaspoon salt
- 2 teaspoons cinnamon
Instructions
- Preheat oven to 400 degrees F.
- Mix dry and wet ingredients separately. Combine wet and dry ingredients and mix until incorporated.
- Lightly spray muffin tins with Pam ® non-stick cooking spray. Fill muffin tins 2/3 of the way full.
- Bake for 15-20 minutes. Let cool and serve.

I absolutely love this recipe. So filling. However, since I do not like raisins, I substitute with dried cherries.

I substitued the bananas for apples and raisins for cranberries. Very yummy!
