1 pound fresh salmon fillet
2 ripe tomatoes, cored and cut in half
1 green bell pepper, cored and cut in half
2 green onions
1 tsp chopped cilantro
1 tsp hot pepper sauce
Preheat oven to broil. Place the tomatoes and bell pepper on a cookie tray, cut sides down. Broil until brown. Place tomatoes and peppers in a food processor along with the green onions, cilantro and pepper sauce. Pulse until chunky. Set aside.
Lower oven temperature to 375. Cut the fish into 4 pieces and place in baking pan. Sprinkle with water. Bake until done, about 20 minutes.
Serve the fish topped with the warm salsa.
