Use this salsa as a dessert sauce, served over ice milk, sorbet or soy ice cream, fruit salad or sliced angel food cake or as a sauce for savory pork, chicken or fish.
4 ripe, unpeeled bananas
2 tsp vanilla extract
1 tsp maple syrup
1/2 tsp brown sugar
1/2 tsp cracked black pepper
2 Tbsp chopped walnuts or almonds
Directions:
Preheat oven to 375 ºF. Place whole bananas (in their skins) on a baking sheet and allow to roast for 20 minutes; skins will turn brown. Allow to cool. Peel and dice bananas and place in a medium-sized mixing bowl. Add remaining ingredients and toss gently until combined.
