Bacon and Chicken Rolls
A meaty combination rolled together.
Yield: Serves 4
Ingredients
- 8 slices bacon, cooked and crumbled
- 1/4 cup Parmesan cheese
- 2 Tbs. fresh parsley
- 1/2 tsp. dried oregano
- 1 lb. boneless chicken
- 2 Tbs. olive oil
- salt
- 2 c chicken broth
- 1/2 cup diced tomato
Instructions
- Mix bacon, Parmesan cheese, and herbs
- Flatten chicken and fill with half of the bacon mix
- Roll up and secure with a toothpick
- In skillet, heat oil
- Add chicken and salt and cook until golden brown
- Remove
- Add broth and tomatoes and heat to boiling
- Add remaining bacon mix
- Reduce heat and simmer on low for 5 minutes
- Return chicken roll, heat and serve

Where's the rest of the nutrition facts? My husband is counting calories...I want to serve him a meal that fits his diet needs but I'm having trouble doing that with a lot of recipes not showing their calories.

i liked it but i used turkey bacon basil and garli can added a little corn starch to the broth to make it a light gravey and served over whole grain pasta very good
