Atkins Friendly Recipe

Atkins BLT Salad

Traditional salad suited for an Atkins diet.

7g Carbs/serving

Yield: Serves 2

Ingredients

  • 7 slices bacon, cooked crisp, drained and crumbled
  • 1 cup chopped lettuce
  • 1/8 cup chopped onion
  • 1/2 medium tomato – chopped
  • 1 Tbs. mayonnaise

Instructions

  1. Stir mayo into lettuce, onion and tomato until evenly coated
  2. Toss in bacon
  3. Serve immediately or chilled

This atkins salad is way to bland, where are the rest of the toppings? I added in cucumber, croutons and cranberries that were a great addition posted Jan 4th, 2009 10:22 pm

Who needs a formal recipe for this?! I've been doing seat-of-the-pants BLT Salad since Day One on Atkins; instead of the mayo, I use one of my own home-brew, ultra-low-carb vinaigrettes. posted Dec 27th, 2008 11:09 am
