Atkins Friendly Recipe

Atkins BLT Salad

Traditional salad suited for an Atkins diet.

Per Serving: 181 calories, 13 g fat, 11 g protein, 4 g carbohydrates, 63 mg cholesterol, 766 mg sodium

Yield: Serves 2

Ingredients

  • 7 slices bacon, cooked crisp, drained and crumbled
  • 1 cup chopped lettuce
  • 2 Tbsp. cup chopped onion
  • ½ medium tomato, diced
  • 1 Tbsp. mayonnaise

Instructions

  1. Put mayonnaise into a medium bowl. Add lettuce, onion and tomato and toss to coat
  2. Add bacon; toss
  3. Serve immediately or refrigerate and serve chilled

I clicked on the link for the macaroni and cheese recipe, and it takes me to a blueberry shake recipe???? That's just annoying!

So simple and to cut calories I use a low-fat mayo, which i read in one of my atkins books

This atkins salad is way to bland, where are the rest of the toppings? I added in cucumber, croutons and cranberries that were a great addition

Who needs a formal recipe for this?! I've been doing seat-of-the-pants BLT Salad since Day One on Atkins; instead of the mayo, I use one of my own home-brew, ultra-low-carb vinaigrettes.
