Alfredo Pasta Sauce

Finally, a healthy way to enjoy this guilty pleasure.


Yield: Makes 1 1/2 cups

Ingredients

  • 1 1/2 tsp. vegetable oil
  • 1/4 cup chopped green onion
  • 1 Tbs. all-purpose flour
  • 3/4 to 1 tsp. garlic spice
  • 1- 12 ounce can evaporated skim milk
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp. basil (dried or fresh)
  • 1/4 tsp. cracked black pepper
  • Salt, to taste

Instructions

  1. Sautee green onion in vegetable oil until tender
  2. Stir in the flour and garlic until smooth
  3. Slowly stir in evaporated skim milk
  4. Cook over medium heat until mixture comes to a boil and begins to thicken, stirring constantly
  5. Remove from heat and stir in cheese, basil, and black pepper
  6. Serve over hot cooked pasta
