Alfredo Pasta Sauce

Finally, a healthy way to enjoy this guilty pleasure.

Per Serving: 145 calories, 6 g fat, 11 g protein, 14.5 g carbohydrates, 14 mg cholesterol, 288 mg sodium
Yield: 1 1/2 cups, 4 servings


  • 1 ½ tsp. vegetable oil
  • ¼ cup chopped green onion
  • 1 Tbs. all-purpose flour
  • ¾ to 1 tsp. garlic powder
  • 1- 12 ounce can evaporated skim milk
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil or ½ tsp. dried basil
  • ¼ tsp. cracked black pepper
  • Salt to taste


  1. Sauté green onion in vegetable oil until tender in a medium saucepan
  2. Stir in the flour and garlic until smooth
  3. Slowly stir in evaporated skim milk
  4. Cook over medium heat until mixture comes to a boil and begins to thicken, stirring constantly
  5. Remove from heat and stir in cheese, basil, and black pepper
  6. Serve over hot cooked pasta
