"I love using guacamole and salsa as a low calorie topping to some of my favorite foods, and even my eDiets Biggest Loser Meal Plan meals. My guacamole recipe is pretty easy and very delicious." - Adam Hurtado, Biggest Loser 10
- 2-3 avocados
- 1 cup low sodium black beans (rinsed & drained)
- 1 can low sodium corn (rinsed & drained)
- 1 can fire roasted tomato chunks
- 2 Tbsp. Fage Greek yogurt
- ¼ cup chopped onion
- 1 Tbsp. minced garlic
- 1 chopped jalapeño (to taste preference)
- fresh squeezed lime
- pepper to taste.
You can use fresh ingredients but to save time you can used canned products as well. Your avocado can be mixed or chunky style per preference. I love to use this mix on my egg white omelets, salads, lettuce wraps, chicken breasts, and basically on anything that I want to add some Mexican flair to.
Combine all ingredients and mixed to prefered chunky or creamy texture.
