Summery Black Bean Salad

It's perfect as a main entree or as a side dish.

Yield: Serves 8

Ingredients

  • 2 14.5-oz. cans unseasoned black beans, rinsed
  • 1 can Mexican corn, rinsed
  • 1 C. chopped tomato
  • 1/2 C. chopped scallions
  • 1/4 - 1/3 C. chopped cilantro
  • 1 tsp. garlic salt
  • cayenne pepper to taste
  • 1 wedge fresh squeezed lime juice
  • 3/4 C. red wine vinaigrette dressing

Instructions

  1. Mix ingredients together
  2. Chill at least 20 minutes (overnight is better)
  3. Serve
