
Low Carb Waffles
Tasty waffles that are low on carbs.

Yield:Serves 6
Ingredients
- 4 large eggs, separated
- 4 Tbs. butter
- 1/4 cup oat flour
- 3/4 cup sour cream
- 1/2 tsp. vanilla extract
- 1/2 tsp. salt
Instructions
- Beat the egg whites with an electric mixer until they form soft peaks
- Set aside
- In another bowl, cream the butter until fluffy and beat in the egg yolks one at a time
- Add the oat flour and sour cream and mix well
- Add a little water, if needed, to reach desired consistency
- Stir in the vanilla and salt
- Fold in the egg whites
- Bake in a preheated waffle iron
- Serve with blackberry syrup, maple butter or low carb maple syrup
