Low Carb Waffles

Tasty waffles that are low on carbs.

Per Serving: 149 calories, 12 g fat, 6 g protein, 4 g Carbohydrates, .5 g fiber, 166 mg cholesterol, 291 mg sodium

Yield: Serves 6

Ingredients

  • 4 large eggs, separated
  • 2 Tbs. butter
  • ¼ cup oat flour
  • ¾ cup light sour cream
  • ½ tsp. vanilla extract
  • ½ tsp. salt

Instructions

  1. Beat the egg whites with an electric mixer until they form soft peaks
  2. Set aside
  3. In another bowl, cream the butter until fluffy and beat in the egg yolks one at a time
  4. Add the oat flour and sour cream and mix well
  5. Add a little water, if needed, to reach desired consistency
  6. Stir in the vanilla and salt
  7. Fold in the egg whites
  8. Bake in a preheated waffle iron
  9. Serve with fresh fruit and/or low carb pancake syrup

I added 2 tbls Splenda to the butter. Cooked it about 30 seconds after the light turned off on the Belgian waffle iron. They were Light, like an egg souffle, a little hard to get out of the waffle iron, not much substance. They were great. Light and fluffy. I will say if you wanted a heavy waffle this is not for you, but it is great as a fluffy souffle with a brown crust. We loved it.

Didn't like these at all. Slightly bitter and extremely soggy. No "crisp" to it.

I used wheat flour instead of oat, and added a pinch of baking powder to help the waffles rise. Besides, it's a descent recipe. One I will make again.

These "waffles" were disgusting! They were more like a sloppy egg mixture than a waffle. I ended up throwing the whole thing out. My dogs wouldn't even eat them.

This is so awesome! I LUV waffles. But Atkins says No-No-No. I can totally eat these.

these are raelly yummy. nice to have a "diet" food that my kids can eeat too... always feel like i'm making several meals at a time.
