Low Carb Waffles

Yield:Serves 6

Ingredients

  • 4 large eggs, separated
  • 4 Tbs. butter
  • 1/4 cup oat flour
  • 3/4 cup sour cream
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Beat the egg whites with an electric mixer until they form soft peaks
  2. Set aside
  3. In another bowl, cream the butter until fluffy and beat in the egg yolks one at a time
  4. Add the oat flour and sour cream and mix well
  5. Add a little water, if needed, to reach desired consistency
  6. Stir in the vanilla and salt
  7. Fold in the egg whites
  8. Bake in a preheated waffle iron
  9. Serve with blackberry syrup, maple butter or low carb maple syrup

punkin:  This is so awesome! I LUV waffles. But Atkins says No-No-No. I can totally eat these.

momX3:  these are raelly yummy. nice to have a "diet" food that my kids can eeat too... always feel like i'm making several meals at a time.
