Crab Cakes

Classic crab cakes with a low-fat angle

Yield: Serves 4

Ingredients

  • 2 cups fresh crabmeat
  • 2 cups soft bread crumbs (4 slices)
  • 1 egg
  • 2/3 cup light mayonnaise
  • 1/3 cup each chopped celery, green pepper and onion
  • 1/2 Tbs. seafood seasoning
  • 1 Tbs. parsley
  • 2 tsp. lemon juice
  • 1/4 tsp. black pepper
  • 1/2 cup dry bread crumbs

Instructions

  1. In a large bowl, combine all ingredients
  2. Shape into 8 patties
  3. Broil for 5 minutes each side or until golden brown
